This is the recipe for all of you out there who think you can’t cook. It’s a simple dish that is made from scratch and tastes amazing. You could easily play around with the meat and vegetables to make a wonderful dish for your tastes. The key is the sauce. It’s sort of a bechamel, but using stock and cream instead of milk. It’s rich and delicious and really makes an ordinary meal extraordinary. You can have this on the table in less than twenty minutes. It goes well with rice or pasta, but would be fine with potatoes too!

Easy Weeknight Chicken
- 1 tbsp oil
- 1 tbsp butter
- 4 chiken fillets, diced
- 1 small package button mushrooms, sliced
- 1 large white onion, diced
- splash white wine (optional)
- 4 tbsp butter
- 4 tbsp flour
- 2 cups / 470ml chicken stock*
- 1 cup / 235ml cream
- salt and pepper
- Chopped fresh herbs**
Melt the butter with the oil in a saucepan over medium heat. Add the chicken, mushrooms and onions and saute until chicken is white, about five minutes.
Meanwhile melt the rest of the butter in a small saucepan and add the flour. Stir for a minute or two then whisk in stock, stirring constantly to prevent lumps. Allow to thicken, then add cream. It will seem very thick.
Add bechamel mixture to the chicken and stir to combine juices. This will slightly thin the sauce, but it should still be nice and creamy.
Cook until chicken is cooked through,season with salt and pepper then stir in your herbs of choice.
Serve with pasta or rice.
* This is one of those recipes that actually works better with bouillon than true stock. I am a huge fan of homemade stock and prefer it 99% of the time, but for this, I use bouillon.
** Basil is a wonderful addition, especially if using pasta, but if going the rice route I use parsley and thyme. Use whatever takes your fancy and spice it up with some chilli flakes or garlic. Broccoli would also make a lovely addition to this dish.
