My friend Scotty had a cookout the other night. He just finished work on his back yard and he wanted to celebrate all of his handiwork with a meal for a small group of friends. Earlier that day he headed down to the Alemany Farmers Market to buy food for the evening. The Alemany Farmer's Market is one of my favorites. They actually have a truck there with live chickens that they kill (right there), dress, pop in a bag and send customers on their way. Some find it a little challenging to stroll past the truck carrying the chickens and I must admit that I get a little weirded out watching people walk away with a chicken bag. Besides the chicken killing station there is much more to explore at this neighborhood market. Scotty picked up a huge bunch of basil, but only needed very little for his recipe so I told him I would whip up a batch of pesto.
This is so easy to make all you need is:
- 1 cup of exra virgin olive oil
- 2 bunches of basil
- 4 garlic cloves
- 1/2 cup of pine nuts
- 2 tsp freshly ground black pepper
- Kosher salt (to taste)
Place all of the ingredients (except salt) into a blender. Make sure your oil is on the bottom, then the garlic, basil, pepper and pine nuts. Blend until smooth, taste and add salt to your liking.
Yes it is that easy.
